Lighting

I have had my Nikon D3100 for a year now and I'm still learning. I would like to know how to adjust settings on my camera to add more lighting to my photos. I want them to look more professional, for example like these photos

    I'm brand new to my camera and I'm still learning, but I ran across a guy who uses the +-Compensation control in combination with his LCD screen to get better images. If the image on the LCD looks underexposed he goes one way, if overexposed the other. I can't remember which way to turn the compensation wheel in order to do this but maybe somebody here knows.

    I also learned that the lower the ISO the better (as in less grain or noise in the images).
