Settings for bridal pictures

Hi,

I recently purchased the D5100 and will be taking pictures at a wedding soon. What are the best settings to use to create good DOF? I will have three different lenses: Nikon DX AF-S Nikkor 55-200mm, f1:4-5.6 Nikon DX AF-S Nikkor 18-55mm f1:3.5-5.6, or Nikon AF Nikkor 28-80mm f1:3.3-5.6.

The ceremony will be under florscent lighting. Which settings will be best to use for this type of lighting.

First, set your white balance to florescent. Using your 28-80mm lens, set dial to scene and then portrait. Set speed to above 100 and use built in Flash.
