Recommend settings for candids ?

Much of my photography is candids -- people conversing in pairs, or groups of 3-5 people partying and posing, or occasional candid head-shots of people laughing, singing. Interior and exterior. My objective is to capture realistic flesh tones and facial colors.

For such photos, what is the recommended selection, within the Menu, for Picture Control, and then within Picture Control, specific adjustments for sharpening, contrast, brightness, saturation, and hue?

Would you adjust these settings for off-camera flash (using TTL) ?
