capturing flowing water

I'm going on a trek to a famous waterfall place and want to capture the water flowing through the rocks, butIi want the water to be only white mist and not water itself. I've seen pics wherein the water is just a white layer of smoothness and then there are the rocks. Can anyone can give me tips or settings?
Also, how do I get the rainbow color in the water? Any ideas?

    To add on, I have the kit lens, prime lens and a 55-200mm lens.

    Depending on your distance from the waterfall I would choose either the prime or the zoom 55-200mm. If you wanted a wide angle shot I would pop the kit lens on and use it at 18mm.

    The one big must is a tripod for this shot without a doubt.
    If you can ISO 100 f/8 and anything slower than 1/15 should get you a nice effect. Even 1/8 is better. Pop the timer on so you don't get any camera shake when you press the shutter. Also remember to turn off any VR because this will make the shot slightly blurred.
