Nikon d3100, red eye

When I take photos of people, indoors or at night, I always end up with red eye and it's very frustrating. Can someone help me with how to stop this from happening?

    I know somewhere within the menu there is an option of red eye removal. It fires a light just before the main flash to give the eyes time to adjust to the light.
