Does the Nikon D3100 have the capability to shoot in other modes other than black and white?

If you're referring to sepia, then no it doesn't. You can edit your images in camera and make it sepia. I think there are six modes you can shoot in if I remember correctly: standard, neutral, vivid, monochrome, portrait, and landscape.
