Exposure setting

HI Moose,

I noticed your Lemp Brewery photography and I plan to take a picture of an upholstery belt fabrication building in San Francisco; it has the same characteristics as the Lemp Brewery. The business no longer exists but the signage and building has been declared historic by San Francisco. What type of exposure should I do? I will be shooting it with my 18-55mm lens.
