What type of settings do you recommend for low light situations with bursts of bright lights such as a stage at a concert or a low lit room?

I'm new to serious photography in general and have only been a 60D owner for two months so my advice may be completely off the mark but I listen to the camera first. If I'm in a new setting that I'm not sure of I take a shot or two in full auto then look at the pictures to see what I do or don't like about them and adjust settings accordingly. To me, the 60D wants to jump to high ISO too often, and in auto it'll use 3200 ISO but I can play with manual and get the same shot at 800-1000. Hope this helps and good luck.
